I dug up my first faux cuisine effort still around online (and thanks to archive.org!) - Andrew’s Vegetarian Gumbo House. This page was captured in 2001, but dates back to around 1996 - but there were some earlier efforts on BBS that are lost. I’ll reproduce the gumbo recipe some other time - the earlier version is more a set of guidelines than a recipe per se.

Don’t burn the roux!
Truly, it is said, that empires may rise and fall (as do stock markets and personal fortunes) but that the greatest tragedy of all is a burnt roux.
While I do not place as high an emphasis on the making of gumbo as I did ten years ago, it is something that I do make still every now and then - and there shall be no burning of the roux
